Meet Chef Judah Ellis

Chef Judah brings more than 25 years of international experience to One Park, but his roots and heart remain firmly in Jamaica. After honing his craft in top kitchens across the Caribbean and beyond, he returned home with a clear mission: to elevate cuisine through technique, creativity, and exceptional ingredients.


Chef Judah will also tell you that One Park’s kitchen is never a one-man show. Every dish reflects the work of a skilled team of cooks, prep chefs, and culinary professionals who share his commitment to quality. Together, they’ve built a culture that values precision, passion, and consistency.


From early morning prep to the final plate that leaves the pass, the team approaches each meal with the care expected of a refined dining experience.
